Everything but the Kitchen Sink Apple, Black Bean & Chic Pea Salad

My cupboards at home rarely contain any treats. on any given day the most exciting things you will find is a can of Tuna (or sardines) rice cakes, chia seeds and a few cans of beans, and maybe, just maybe some chocolate chips for baking. Having my pantry bare, forces me to eat fresh and eat foods that have an expiration date (Fruits, veggies). And when it’s not in the cupboards, it’s very unlikely for me to actually trek out to a grocery store for something full of sugar or savory, like chips. In my mind, nothing is worth the comfort of my home, or the cold blistering snows of winter. For those of you who are trying to get back on track, empty your kitchen cupboards and pantry of all the foods that you know you shouldn’t be eating (cookies, chips, sweet spreads etc.) and donate non-perishable items to your local food bank. NOT having these items at home will make it less likely for you to sabotage your own progress. Believe me I have a big sweet tooth and if cookies were staring me in the face I would eat them…but since they’re not there an apple does nicely. What most people don’t remember is that an apple or a bowl of berries (or your fruit of choice) is just as likely to curb cravings for sweets as a bowl of ice cream, but without all the guilt.

On this fall day, I was craving something both savory and sweet. I had a few apples kicking around, a cucumber and some celery that needed to be eaten up before a weekend getaway. I also really wanted to stay away from meat so I decided on making a salad using up all the leftover perishable food I had. I used everything I could find in my pantry as well as my fridge and came up with concoction! You cna use whatever seasonings you like or your own additions of veggies (if I had any, I would have included red onion, peppers and maybe even kale).

Ingredients:
One Granny smith Apple (half)
One Macintosh Apple
Celery
Cucumber
1 can on Black Beans
1 can of Chick Peas
1 tsp. Cumin
Salt and Pepper to taste
Freshly squeezed lemon
¼ cup of corn nibbles

My Fairy Blog Mother

Some of you may have noticed that my blog recently went through a transformation. It’s all because of my fairy blog mother Laura, from the Blog of Worldly Delights. Laura is not your typical blog guru, she is by far one of the most accommodating people I have worked within the blogging industry, especially for someone like me who is extremely challenged with technology and web design. Not only is she a sweetie, I just love her style, not to mention her funky hair! She has agreed to let me do a brief interview of who she is and how she became a blogger.

Can you tell us about yourself? I'm 27, and live in a teeny city in Illinois. I live with my husband of 5 years and our 3 adorable kitties. I love reading books (classics and comics), cooking, and crafting, but I'm definitely not a domestic (as in, I hate housework and chores). I have an M.A. in Old English Literature, but I haven't taught in a while. Instead, I sell my cute crafts in my Etsy store and blog about the delightful things in my life.
How did you get into blogging? And tell us about your blog? I started my blog, the blog of worldly delights, during my last semester of grad school (2011) because I wanted to take my mind off of translations, teaching, and academic work. My blog has been my creative outlet where I showcase my outfits, recipes, DIY ideas, and musings about all the stuff that I hold dear to my heart.
What would you consider your style to be? I like to think of my style as "geektastic." I usually go for colorful and bold pieces with lots of fun, modern prints. I guess that's my love for comic books showing! I'm also trying to be a more ethical consumer, so I buy most of my clothes from vintage or thrift stores. I love the challenge to update  those pieces and mix them with my current pieces!

Who inspires you? Lots of people inspire me! A lot of those I look up to are my family and close friends, but my husband is number 1 on that list. He inspires me to do better and be better.

How did you become skilled in designing blogs? Oh Nini, you flatter me! I don't have any formal training in design or even css/html, and most of it I learned while making layouts for all the webpages I've had when I was a teen. I started playing with code and "design" around back when Geocities was huge, but never really took it seriously until I started my current blog and etsy store where I had to learn how to make my sites more appealing and user-friendly. It's really just a lot of experimentation and practice. :)
Where do you see yourself in the next 5 years? Hopefully, in 5 years, I'll have my own wee storefront. I love working with my hands and creating, and I really hope to be able to share that.
